44. L.P (Meat) 45. Fried Mutton 46. Mutton / Chicken Kurma 47. Chops 48. Shaamps

44. L.P (Meat)
¼ kilo of trimmed meat.
Take 3 medium sized tomatoes. Chop them into small pieces. Add to the washed meat. Add 3-4 pinches of salt, ½ tsp garlic and ½ tsp ginger. Add 20-25 leaves of kathamalee + 2 level tsp of chilli powder + 1 pinch of turmeric. Pressure cook for 30 minutes on low fire.
Remove from cooker. Transfer to a kadai and cook till all the water evaporates stirring constantly. Add 1.5 tsp of oil when all the water has evaporated. Cook for 5 more minutes. Taste in the middle and then add more if necessary.

45. Fried Mutton
300 grams of trimmed meat.
Chop one medium sized onion. Take 1.5 tbsp of oil. Add chopped onion. After it becomes brown, add ½ tsp of garlic & ½ tsp of ginger. Fry for 2 minutes. Add the meat and fry well in the oil and add other 2 ingredients. After 5 minutes add one chopped tomato, add 3-4 pinches of salt and add 2 level tsp of chilli powder and a pinch of turmeric powder. Fry well in the oil.
You can add any vegetables such as 10-15beans or cabbage or peas. Cook for 5 minutes. Add 1 cup water. Transfer to pressure cooker. Cook for 30 minutes. Transfer to kadai. Cook till water evaporates. As soon as you transfer to kadai, if you have added any veggies to the meat earlier, add 1 tbsp of ground coconut of available. No need to add coconut if no vegetables have been added.

46. Mutton / Chicken Kurma
½ kg chicken or 300 gms mutton (meat).
Heat 1.5 tbsp of oil. Add cinnamon. Add 1 medium sized finely chopped onion. Let it become brown. Add ½ tsp of garlic and ½ tsp of ginger paste. Add 3-4 pinches of salt or salt to taste. Add mutton and fry in the masala and oil for 5 minutes. Next add 10 leaves of mint and 15-20 leaves of coriander, a large tomato, 2 green chillies, 1.5 tsp of chilli powder, 1 pinch of turmeric and 1 peeled and quartered potato. Let it all simmer for 10 minutes. Add 1 cup of curd and simmer for 5 minutes.
If it is mutton, then pressure cook for 30 minutes.
If it is chicken then add 2 cups of water and simmer till the chicken is cooked.

47. Chops
Meat 300 gm
Heat 1.5 tbsp oil. Add 1 finely chopped onion and 4-5 pinches of salt. Add ½ tsp of ginger and garlic paste. Add a pinch of turmeric powder. Add a peeled and quartered potato and 1/5 tsp of black pepper powder. Add meat and fry on sim for 10 minutes. Transfer to cooker for 30 minutes.
After pressure cooking, transfer to kadai and add 1.5 tsp of ground coconut and simmer till the gravy is thick.

48. Shaamps
1 kg chopped mutton + 2 handful roasted Bengal gram.
2 chopped onions + 3-4 pods of garlic, 5-6 green and red chilies and 2-3 1inch cinnamon sticks, 3-4 cloves and cardamom, Cilantro, ½ tsp turmeric, ½ tomatos.
Mix all this and cook until meat is tender. Grind and add salt to taste. Before frying, mix in chopped coriander and mix.
