63. Traditional coffee from Grandmaa by Jahnavi N. Gurjer

Ingredients- 4 tbsp ground coffee powder, 100 ml boiling water, skimmed milk and sugar to taste.
Preparation Time- 25 minutes
Serves- 6-8
Vessel- a copper or a stainless steel traditional two-tiered filter (it is available in vessel’s shop).
Method- Take a suitable measure of ground filters coffee powder- 4tbsps and put only half the quantity, 2 tbsps into the perforated container.
Now put the plunger on the coffee powder. Take some cold water (2 tsps) and sprinkle it on the coffee powder. After this is done add the remaining coffee powder (2 tbsps) onto the plunger.
Pour the required quantity of hot water inside the container and swiftly close the lid.
But remember not to over boil the water. Water should be boiled only till it begins to bubble, as over boiled water robs the coffee powder of its aroma.
The decoction will take approximately 20 minutes to percolate to the bottom container. Once the decoction is ready, pour the desired quantity of decoction into your cup or the damara tumbler and add diluted milk and sugar to taste.
To retain the flavour of coffee, milk should be diluted with water in the ratio of 1:1, before adding it to the decoction.
Mix the decoction with milk and sugar (optional) briskly by pouring it from the bottom part of the damara tumbler to the stainless steel glass and vice versa.
Drink it hot. Enjoy the freshness and the aroma of pure filter coffee.

Tips from the Women Coffee Promotion Council - Stainless steel or copper filters are the best/ The coffee powder can be ground either fine or coarse depending on the size of the perforations in the filter.
A proportion of 1:3 of Arabica and Robusta varieties of beans is recommended for a fine blend of strength and aroma.
Freshly roasted and powdered beans bring out the best results.
Chicory may be avoided in order to enjoy the taste of pure filter coffee.
Milk should be dilute and hot.

Sugar is optional.
